We offer dishes that can only be experienced on a given day, using vegetables from the Miura Peninsula, premium fresh fish delivered directly from Misaki Port's wholesale market, and cooking techniques perfected at our sister restaurant, Kutsukake Stay Naka-Karuizawa. Enjoy a modern dining experience featuring creative Japanese cuisine and gourmet moments that highlight the superb ingredients nurtured by Japan's rich soil.

くつかけステイグループ総料理長福本 啓太神奈川県横須賀市出身。17歳の頃、和食の道に入り料理人として歩み始め、神奈川県、東京都の会席料理屋や割烹を中心に修行を積む。その後、ミシュラン掲載店有する神奈川県のリゾートホテルの総料理長を務め、2018年当グループの料理長として就任。
Keita Fukumoto, Executive Head Chef at Kutsukake Stay Group, was born in Yokosuka City, Kanagawa Prefecture. He began his culinary journey at 17, honing his skills at various traditional Japanese restaurants and kaiseki ryotei in Kanagawa and Tokyo. He later became the Executive Head Chef at a resort hotel in Kanagawa Prefecture, listed in the Michelin Guide. In 2018, he became the head chef of our Group.

東京都江戸川区出身。東京ベルエポック製菓調理専門学校卒業。 在学中から様々なジャンルの飲食店(居酒屋、バー、お好み焼き、寿司など)で研鑽を積む。 本格的に和食(会席料理)の調理技術を学ぶ為に、歌舞伎町の月亭、光林坊で研鑽を積む。2023年、割烹ダイニング波里 HARII の料理長に就任する。 定期的に母校である調理師専門学校で講師アシスタントも務めている。
Born in Edogawa Ward, Tokyo, Hiroteru Mineoka graduated from the Tokyo Belle Époque Confectionery Culinary School. During his studies, he honed his skills at various types of eateries, including izakayas, bars, okonomiyaki restaurants, and sushi bars. To delve deeper into the art of traditional Japanese cuisine (kaiseki), he further refined his craft at establishments like Tsukitei and Kourinbou in Kabukicho. In 2023, he became the Head Chef at Kappo Dining HARII. He also serves as an assistant instructor at his alma mater, the culinary school, on a regular basis.
